Key lime coconut white chocolate bars

i never know whether brownies made of white chocolate can still be called brownies.   Without brown sugar, they can’t be blondies.    But ‘brownie’ seems reserved for milk or dark chocolate…

Anything smaller and rounder than what you expect always seem cute and key limes def fit in that category.

To make the bars, melted 2 oz of coconut oil, 2 oz unsalted butter, and 3 oz white chocolate.

Added zest and juice of 3 key limes.

Stirred in 165 grams of granulated sugar, 2 packets of True Lime, and a pinch of salt.

Added 3 eggs.

Stirred in 95 grams of flour and 20 grams of dried shredded coconut (unsweetened).

Poured in an 8” by 8” pan

Baked for 25 to 30 mins.
