Garlic scape pesto with salmon and shrimp

Being June, spring is almost over but garlic scapes have started popping up at the local Whole Foods.

Because there is no dairy, feel a bit remiss in calling it a pesto.  It looked kinda like a dry poultice in all honesty but the flavor made up for the appearance.

Ingredients (makes 4 to 6 servings maybe?):

  • 135 grams garlic scapes
  • 75 grams walnut pieces
  • olive oil
  • salt
  • white pepper
  • Slap Yo Mama seasoning
  • 2/3 pound shrimp
  • 1.25 pound salmon fillet
  • 8 cherry tomatoes (thought I had more but apparently ate more than expected the previous night)
  • 1 largish zucchini

The blue dish with the smaller piece of fish was the dogs’ portion; they didn’t get any pesto though.

Preheat oven to 400 degrees F.

Garlic scapes have a small bulb.

Trimmed both sides (including the bulb).

Chopped scapes and placed in mini prep.

Threw in walnut pieces.

Blitzed.

Added olive oil, salt, and pepper to taste.  Maybe 2 tablespoons of oil?  No idea how much salt and pepper.

This was pretty dry.  Next time would process walnuts with olive oil first then add the scapes.  Maybe it would end up smoother and the mini prep would have an easier time?

On a sheet of aluminum foil, layered salmon fillets on top of chopped zucchini tossed with a little pesto, salt, pepper, Slap Yo Mama.

Salt and peppered the salmon and smeared on some pesto.

Topped with shrimp that had been tossed in pesto and cherry tomatoes.

Wrapped the foil over itself and baked in oven from 30 to 40 minutes (checked for doneness at 25 mins – at this point just left the foil open since was too much effort to wrap it up again)

While this was baking, cooked the dogs’ salmon in a pan.

The smell made them hover in the kitchen.

They were hopeful dinner wouldn’t take so long.

Turned out pretty well.  Next time I’d be tempted to nix the salmon and just do more shrimp but i’m biased.  The dogs’ dad liked the salmon.

Zo approved of the flavors not so much the presentation.
