Lemon Earl Grey Cookies

I’ve been trying to incorporate various teas in my baking for a while but haven’t found the right recipe where the tea isn’t overwhelmed.    While this makes a very nice cookie, it might be a little too lemony.   Which isn’t a bad thing but the Earl Grey gets a little lost.

 

Ingredients

  • 1/2 cup butter
  • 3/4 cups sugar
  • 1 egg
  • 3 packets of True Lemon
  • 3 tea bags of Earl Grey
  • zest of 1 lemon
  • juice of 1/2 lemon
  • 3/8 teaspoon salt
  • 3/8 teaspoon baking powder
  • 2 cups flour

Opened the tea bags and processed the contents with the sugar.

Mixed tea sugar with softened butter.

After the butter is well incorporated, mixed in egg.

Zested one lemon and added juice of half the lemon (this was a large lemon).

Stirred in salt and the True Lemon.

Added flour in 1/2 cup at a time.

Wrapped in plastic and refrigerated over night.   It helps to refrigerate a couple of hours at least for clean cut out cookies.

Love these doggy cookie cutters.   Esp the shiba in the top right.

Rolled the cookie dough to 3/8 to 1/2 inch thick.

The french bulldog’s legs had a tendency to brown faster than the rest of him.

These poodles look a bit like Coco.

The lab’s tail is quite long.

Curled the lab and shiba tails so they were less likely to break,   The dachshund is quite cute too.

Baked at 375 for 8 mins.

After baking, their paws got a lil brown.   But they are cute.

So many dogs.

Coco approved.
