Cheese crackers

I hate cheese.   I hate the way it smells, the way it melts into the lines of your fingertips and then the smell lingers even after washing your hands.

That being said, the dogs’ dad loves cheese.   And it was his birthday.   So cheese crackers using his favorite cheddar.

This is Sweet Red cheddar.   Zo could not be trusted near it.

Ingredients:

  • 6 oz Sweet Red cheddar grated
  • 2 oz unsalted butter
  • 3/4 cup flour, plus more for dusting
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon cream

Threw everything but the cream in a mini prep.

The butter should have been softened more.

Pulsed until it came together and added the cream.

It looked like a cheesy tsunami.

Or a cheese person sitting in lotus position.

Instead of making straws, rolled it out with A LOT of flour.   Cut out little flowers and docked with a fork.

Baked at 350 for 9 to 12 mins

Since he loves pistachios as much as cheese, crushed some and made circles.

There are no pics with Zo or Co with the finished crackers.   They would have eaten them before the shutter closed.
