Peach Apricot Honey White Tea Cookies

These went into Auntie A’s snack pouch.

Not sure how I feel about them – because of the dried apricots these are really chewy.   And I’m not all that into chewy.

Ingredients:

  • 1 stock / 4 oz butter
  • 3/4 cup sugar
  • 1 extra large egg
  • 3 peach honey white tea teabags
  • 2 oz dried apricots
  • 1.25 oz freeze dried peaches
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 3/8 teaspoon baking powder
  • 2 cups flour

Processed freeze dried peaches with a quarter cup of sugar and the contents of 3 teabags.

Emptied the contents into a bowl.

Processed the remaining sugar with chopped dried apricots.

Mixed butter, peach mixture, and apricot mixture.

Prob would have been better to cream the butter first.

Mixed in the egg, honey, and salt.

Added flour and baking powder.

Rested the dough in the fridge overnight.   Could bake these with maybe an hour of refrigeration but the additional time helps dry out the dough and makes the cookie impressions look better.

Rolled the dough to 3/8 inch thickness and cut out little Hello Kitties.

Baked at 375 for 8 mins.

Zo thought they they were fun.

Co also approved.

The flavor is pretty apricot.   I’m not sure how I feel about them.   They’re a nice change of pace from chocolate or lemon flavors but next time would decrease the amount of apricots and peaches.
